Persimmon Pie

This is a different pie that's just as sweet as any other fruit pie, without adding a ton of sugar. Try it if you can find persimmons in season.

  • 1 C. persimmon pulp
  • 1 tsp. cinnamon
  • 2 eggs
  • 1 1/2-2 C. milk
  • 1/2 C. sugar
  • 2 Tbs. butter

Combine all and pour into an unbaked crust. Bake in moderate oven until firm.
