Persimmon Pudding

Persimmon Pudding

This sweet dessert makes a delicious pudding with nuts and raisins and spices

Ingredients

  • 1 C. ripe persimmon pulp
  • 1/4 C. butter
  • 2 C. milk
  • 1 C. sugar
  • 1 C. flour
  • 1/2 tsp cinnamon
  • 1/4 tsp. nutmeg and cloves
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 3 beaten eggs
  • 1/2 C. nuts
  • 1/2 C. raisins

Directions

Cream together persimmon pulp, milk, butter and sugar. Sift together flour, nutmeg and cloves, salt, cinnamon, and baking soda. Beat in eggs, raisins and nuts. Pour into a baking dish. Bake in a slow oven. Serve with whipped cream or your favorite hard sauce.

  • I made this recipe for a couple of reasons, a tree full of persimmons and a pot luck at work. It was good but I would increase the spices a bit. Put the eggs in after the butter and sugar. I used a 9x9 glass pan at 300F. It took a long time to bake 11/2 -2 hours until it felt done. I iced them with a thin icing that I used 1Tbs. of brandy instead of vanilla. Cut them into 1 inch squares after icing.
