This traditional comfort food is given an adult upgrade with the addition of Guinness! If you don't have miniature pie dishes, you can easily keep this pot pie recipe as a full-sized pot pie!

  • 3 lb. boneless beef shin
  • 2 Tbs. oil
  • 4 celery hearts, trimmed, halved and leaves reserved
  • 8 shallots, peeled and whole
  • 8 cloves garlic, peeled and whole
  • 1 bunch small carrots, peeled
  • 1 Tbs. tomato paste
  • 34 oz. Guinness
  • 3 Tbs. tarragon leaves
  • 2 sheets puff pastry, cut into 2x4 inch circles
  • 1 egg, lightly beaten

Preheat the oven to 400 degrees. Rub the beef with oil and season with salt and pepper. Place the beef in a cast-iron casserole dish. Add the celery, shallots, garlic, and carrots around the beef. Cook for 45 minutes. Remove the dish from the oven and add the tomato paste, Guinness, and tarragon. Cover and bake at 365 degrees for 3 1/2 to 4 hours, or until the beef is tender and the sauce is thick. Remove the meat from the sauce and tear into chunks. Return the beef to the sauce and season to taste.Spoon the mixture into personal pie dishes and top with the pastry circles. Brush lightly with the beaten egg and bake for 20 minutes, or until golden.
