This popular addition to pasta dishes, made with basil leaves and pine nuts, also works as a spread.

  • 2 bunches of basil leaves (washed and stalks removed)
  • 100 grams of roasted pine-nuts (about 5 minutes on a flat tray in the oven at about 170 C)
  • 4 cloves of crushed garlic
  • 100 grams of shredded parmesan
  • 50 mls. of olive oil
  • a little cracked black pepper

Process all ingredients and while the motor is running incorporate the olive oil.

  • my mother makes pesto with almonds and its really good in her dishes. they are used as a cheaper nut pine nuts are so costly!
