Pesto does not only go on pasta! Try this delicious onion, pesto, and chicken panini. This sandwich is easy to make and easy to grill.

  • 1 loaf of ciabatta bread sliced in half horizontally
  • 1 package of chicken sliced into strips
  • ½ cup of pesto sauce
  • 1 red onion sliced thinly
  • 4 slices of mozzarella
  • ½ cup of mayonnaise

In a plastic bag or bowl combine the chicken and ¼ of the pesto sauce. Make sure the chicken is fully submerged in the pesto. Place chicken on preheated pan for about 5 minutes each side, take out of pan. Mix the ¼ of pesto and ½ cup of mayonnaise thoroughly. Spread mayo on one side of each piece of bread. Then, mayonnaise side up, place chicken, onions, and the cheese to make a sandwich. Finally, grill each side of the sandwich for about 3 minutes each and serve.
