  • 4 boneless skinless chicken breasts, chopped
  • 2 tsp. garlic powder
  • 1/4 C. pesto
  • 1 C. shredded mozzarella cheese
  • 1 can cream of chicken soup
  • 1/4 C. tomato, roughly chopped
  • 1 box jumbo pasta shells

Spray the inside of your crockpot with non-stick cooking spray and arrange the chicken in the bottom. Season with garlic powder and cover with pesto. Cover and cook on a low setting for three hours. In a large bowl, combine cream cheese and soup. Pour over the chicken and cook for another hour. When the chicken mixture is almost done, prepare pasta according to box directions and set aside. Preheat your broiler to a high heat setting. Stir tomatoes into your crockpot until heated through. Carefully spoon one or two heaping tablespoons of the chicken mixture into each shell and transfer to a baking sheet. Sprinkle with mozzarella and broil for five minutes or until cheese begins to brown. Let stand for five minutes before serving.
