Crispy potato gnocchi tossed in homemade pesto that makes a great meal for anytime of the day. Perfect as a to go lunch meal.

  • 1 pack potato gnocchi
  • 1 C pine nuts
  • 1 garlic clove; minced
  • Olive Oil
  • Pepper
  • Lemon Juice
  • Basil leaves
  • Grated parmesan cheese

Boil the gnocchi with some added olive oil and salt until tender. Drain and set aside.

While the pasta is cooking, dry roast the pine nuts until it becomes brown. Then remove and set aside.

Wash the basil leaves and set aside.

Then to make the pesto, put the pine nuts, garlic, basil and more olive oil into a food processor and blend until a smooth pesto is formed.

Transfer into a bowl and season it with the cheese, pepper and lemon juice to desired taste.

When the pesto is ready, prepare a skillet and throw in some olive oil and the boiled gnocchi.

Toss it until it becomes brown and crisp. When it is done, toss it in with the pesto and serve with some grated parmesan cheese on top.
