  • 4 ciabatta sandwich rolls
  • 2 Tbs. olive oil
  • 2 small tomatoes
  • 8 slices mozzarella cheese
  • ½ C. basil pesto

Heat a closed contact grill to medium. Slice ciabatta bread in halves and brush each with olive oil then pesto. Top each bottom half with 2 slices of cheese and tomato slices. Sprinkle salt and pepper on top then put top half of bread on top.
Grill each sandwich for about 5 minutes.
