  • 1 1/4 C. flour
  • 3/4 tsp. baking soda
  • 1/2 tsp. salt
  • 1/3 C. butter, softened
  • 3/4 C. brown sugar
  • 1 egg
  • 1 1/2 C. mashed very ripe banana
  • 1 tsp. vanilla
  • 1/2 C. mini semi-sweet chocolate chips

Preheat oven to 325 degrees. Line a loaf pan with parchment paper. In a medium mixing bowl, combine flour, baking soda and salt; whisk well. In a large mixing bowl, beat butter and sugar on medium speed for 1 minute or until light and fluffy. Add eggs, one at a time, beating well after each is added. Add bananas and vanilla and mix until well combined.

Reduce speed on low. Gradually add dry ingredients in batches. Fold in chocolate chips. Pour into pan and top with any additional chocolate chips, if desired. Bake for 50-65 minutes or until an inserted toothpick comes out clean. Cool completely and remove from pan.
