A friend brought this dish to my house for Thanksgiving one year and it was a HUGE hit!. I asked for the recipe and now its requested weekly. Try it and you will love it!

Ingredients

  • 2 15-oz. cans of corn (you can use frozen too)
  • 1 8-oz. block of cream cheese (softened)
  • 1 Tbs. chives, chopped
  • 1 Tbs. butter (optional)
  • salt and pepper to taste
  • 1 tsp. chili powder (optional)

Directions

Combine all ingredients and put in microwave until corn and cheese combines together and is heated through. You can serve it right from the microwave or what I do is after it is heated through in the microwave, i put in a baking dish and bake for 10 minutes longer so it forms a light crust on top which i just love.

  • My sister n law makes a version of this. She adds a 8 oz pkg of cream cheese per can of drained corn and adds chopped (pickled) jalapenos to it. It is so very good!
