Picnic Potato Nicoise Salad
Ingredients
- 6 med. red-skinned potatoes, boiled and cut into bite sized pieces
- 1 can tuna
- 4 hard boiled eggs, chopped
- 10 black olives
- 4 ripe Roma tomatoes, cut into bite size pieces
- 1 C. cooked green beans
- 1 C. artichoke hearts
- 1-2 tsp. capers
- 1 Tbs. chopped fresh basil
- 1 tsp. salt
- 3/4 C. olive oil
- juice from 1/2 lemon
- 1/2 tsp. freshly ground pepper
- 1/4 C. wine vinegar
Directions
In a bowl, place potatoes, beans, artichokes, eggs, olives, tomatoes and tuna. In a separate bowl: mix capers, lemon juice, basil, salt, pepper, oil, and vinegar. Pour over potato mixture. Allow to chill in refrigerator before serving.
