Ingredients

  • 6 med. red-skinned potatoes, boiled and cut into bite sized pieces
  • 1 can tuna
  • 4 hard boiled eggs, chopped
  • 10 black olives
  • 4 ripe Roma tomatoes, cut into bite size pieces
  • 1 C. cooked green beans
  • 1 C. artichoke hearts
  • 1-2 tsp. capers
  • 1 Tbs. chopped fresh basil
  • 1 tsp. salt
  • 3/4 C. olive oil
  • juice from 1/2 lemon
  • 1/2 tsp. freshly ground pepper
  • 1/4 C. wine vinegar

Directions

In a bowl, place potatoes, beans, artichokes, eggs, olives, tomatoes and tuna. In a separate bowl: mix capers, lemon juice, basil, salt, pepper, oil, and vinegar. Pour over potato mixture. Allow to chill in refrigerator before serving.
