This simple pasta recipe is a wonderful dish to help us mentally transition from Winter to Spring. With a few simple ingredients, the finished product comes out absolutely delicious. Make it for a crowd, as this healthy pasta recipe with vegetables is our new potluck favorite!

Ingredients

  • 1 lb. whole wheat spiral pasta
  • 1 lg. zucchini, julienned
  • 1/2 lb. Brussels sprouts, sliced and cored
  • 1 sm. bag frozen peas
  • 1 C. grated Parmesan cheese
  • 3 Tbs. olive oil
  • salt and pepper
  • 2 qts. veggie stock
  • 2 qts. water

Directions

Boil pasta in the vegetable stock and water, and undercook slightly. Drain pasta and set aside. Increase the heat of the pasta liquid back to a boil, and add the zucchini and Brussels sprouts. Boil for about 5 minutes or until tender throughout. Turn off the heat and add the peas. Drain the boiled veggies after 2 minutes of sitting in the water. Add pasta to the veggies, toss. Transfer to serving tray, top with Parmesan cheese, and serve.
