Pina Colada Muffins

With rum extract, these are just like the tropical drink, but you won't have to give up your keys.

Ingredients

  • 1 box (2 layer) yellow cake mix
  • Number of eggs cake mix calls for
  • 1 stick of melted margarine
  • 2/3 c. water
  • 1 C. chopped nuts
  • 2 C. coconut
  • 1 small can crushed pineapple (drained)
  • 1 tsp. coconut extract
  • 1 tsp. rum extract

Directions

Beat first 4 ingredients together for 3 minutes. Add remaining ingredients and mix well. Fill greased muffin tin (or ungreased muffin papers) almost to the top. Bake at 350 for 20 to 25 minutes.
