Pine Nut Salad

Ingredients
- 1/4 C. pine nuts
- 6 C. mixed greens
- 1/4 C. virgin olive oil
- 2 Tbs. fresh lemon juice
- pinch grated lemon zest
- salt
- freshly ground black pepper
Directions
Place pine nuts in a small skillet. Turn the heat to medium and cook the nuts, shaking pan occasionally until they are lightly toasted. This should take 5 minutes. Let cool. Wash greens. Dry well and tear them into bite-size pieces. In a large salad bowl, whisk together the oil, lemon juice, zest and salt and pepper to taste. Add greens and toss well. Add pine nuts and toss again. Serve immediately.
