  • 6 skinless, boneless chicken breasts
  • 20 oz. pineapple slices
  • 8 oz. can sliced water chestnuts
  • 1 red sweet pepper
  • 2/3 cup chicken broth
  • 1 tsp. grated fresh ginger
  • 1 clove garlic

Cut chicken breast halves and place them in a medium slow cooker. Drain the pineapples but also reserve the juice. Place pineapple slices, water chestnuts and sweet pepper on top of the chicken. Stir together the pineapple juice in a small bowl with the chicken broth, ginger and garlic. Pour over chicken. Cover and cook the chicken for 4-5 hours. Once ready, remove and let cool.
