  • 3lbs boneless chicken breast, cubed
  • 1½ cup unsweetened pineapple juice
  • 3 cloves garlic, minced
  • 1/3 cup soy sauce
  • tortillas
  • 1 avocado, diced
  • ½ onion, diced

Spray the crockpot with non-stick spray and add the chicken breast. Add the pineapple juice, soy sauce, garlic and cook on low for 7 hours. Remove the chicken from the crockpot with a slotted spoon and serve over tortillas topped with avocado and onion.
