Pineapple Beets

Take this vegetable and fruit side dish to a summer party or potluck. It's also great for a holiday meal.

  • 2 Tbs. cornstarch
  • 1/2 C. sugar
  • 1/4 C. vinegar
  • 1 C. pineapple juice from crushed pineapple
  • 1 can beets, drained
  • 1 Tbs. margarine
  • 1/2 C. pineapple, crushed

Make paste with 1/2 C. pineapple juice and cornstarch. Add sugar, vinegar and rest of juice. Cook the mixture until it thickens, in double boiler. Add crushed pineapple and beets.

  • I find it difficult to find fresh beets and canned just aren't the same to me. Where do you buy them? I am Jax, Florida on the west side of town. Anyone find them? I guess I need to try and grow them.
