  • 4 carrots, grated
  • 2 C. flour
  • 1 1/2 tsp. baking soda
  • 2 tsp. baking powder
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 2 C. sugar
  • 4 eggs, beaten
  • 1 1/2 C. vegetable oil
  • 1 (8-oz.) can crushed pineapple, drained
  • 1 can vanilla frosting

Preheat oven to 350 degrees F. Mix flour, baking soda, baking powder, cinnamon and salt in a bowl. Set aside. Mix sugar and eggs together. Add oil and mix. Combine with dry ingredients and mix until blended. Stir in carrots and crushed pineapple. Pour into large cake pan. Bake for 40 to 45 minutes. Place cake on wire rack to cool and then spread top with frosting before serving.
