Pineapple Casserole

This is a delicious sweet fruit side dish that goes great with pork.

Ingredients

  • 1 stick butter
  • 1 C. sugar
  • 4 eggs
  • 1 20-oz. can crushed pineapple (in juice), drained
  • 6 slices white bread, cubed
  • 1/2 tsp. cinnamon

Directions

Drain pineapple and reserve 1/2 C. of the juice. Beat sugar and butter; beat in the 4 eggs, then the pineapple, 1/2 C. juice and the bread cubes. Pour into greased casserole dish (I use a square one) Top with cinnamon. Bake uncovered at 350 degrees for 1 hour.
