This is a fun way to use pineapple in a dessert. These cookies are sweet, moist and way different than anything you've ever had.

Ingredients

  • 1 C. shortening
  • 1 egg
  • 3 1/2 C. flour
  • 1 tsp. soda
  • 1/4 tsp. nutmeg
  • 1 1/2 C. sugar
  • 1 9-oz. can crushed pineapple
  • 1 C. pineapple juice
  • 1/2 tsp. salt
  • 1/2 C. nuts

Directions

Mix shortening thoroughly, with sugar and egg. Stir in the pineapple. Sift together and stir in flour, soda, salt and nutmeg. Mix in the chopped nuts. Chill 1 hour. Preheat oven to 400 degrees. Drop rounded teaspoon about 2-inch each, apart on greased sheet. Bake until set in oven for 8-10 minutes.
