Pineapple Drop Cookies

Crunchy nuts and sweet pineapple make up a tasty cookie, but the best part is the sticky pineapple frosting!

Ingredients

  • 1 C. firmly packed brown sugar
  • 1/4 C. shortening
  • 1/4 C. butter
  • 1 egg
  • 1 tsp. vanilla extract
  • 3/4 C. crushed pineapple, drained well
  • 2 C. sifted all purpose flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 C. chopped walnuts or pecans
  • Frosting:
  • 1 C. confectioners' sugar
  • 3 Tbs. pineapple juice (approximately)

Directions

Cream together sugar and shortenings; add egg and vanilla and beat well. Add well-drained pineapple; stir in dry ingredients which have been sifted together. Add nuts. Drop by teaspoonful onto un-greased cookie sheet. Bake at 375 degrees for 12 minutes or until lightly browned.

To make frosting, beat sugar and juice together, using amount of juice necessary to make spreading consistency. Frost tops of cookies.
