Pineapple-Marinated Pork Chops

This easy crockpot recipe adds a bit of island flair with pineapple.

  • 6 pork chops
  • 1 20 oz. can pineapple chunks, including juice
  • 1/4 C. packed brown sugar
  • 2 tsp. soy sauce

Put pork chops into a plastic zip-type bag. Mix remaining ingredients; pour over pork chops in bag. Store in refrigerator overnight. Put everything into a crockpot and cook on low for 6-8 hours or until done.

  • I also added onions and green peppers. I used very large thick chops and the meat was very dry after 6 1/2 hrs on low. The entire dish was pretty tasteless. This recipe went into the trash.

  • 6-hours may be enough. At 8-hours we wound up with something more akin to shreeded pork. Added frozen bell peppers and onions lat hour. It was great! Definitely a keeper.
