Pineapple-Orange Sunshine Cake
Ingredients
- 1 box yellow cake mix
- 1/4 C. apple sauce
- 4 eggs
- 1 11 oz. can mandarin oranges in light syrup
- 1 8 oz. container Cool Whip Light
- 1 3.4 oz. pkg. instant vanilla pudding
- 1 15 1/2 oz. can crushed pineapple in juice
Directions
Preheat oven to 350 degrees. In a large bowl, stir together cake mix, eggs and apple sauce until moist. Beat by hand for 2 minutes. Coat a 9"x13" cake pan with cooking spray (can also use two 8" round cake pans ). Pour batter into prepared pan and bake for 30- 35 minutes or until a toothpick inserted into the center comes out clean. Cool completely. In a large bowl, mix together oranges, cool whip, pudding mix and pineapple until well blended. Spread over cooled cake. Store any leftover cake covered in the refrigerator.
