Pineapple Shrimp and Scallops

Serve this simple but delicious seafood dish over greens.

  • 1 C. frozen cooked tail-off shrimp, thawed
  • 1 C. frozen scallops, thawed
  • 1/2 C. pineapple salsa
  • 1 Tbs. fresh cilantro
  • 1 Tbs. olive oil

Saute scallops in olive oil for 3 to 4 minutes or until opaque, adding shrimp near the end.  Add salsa and saute for another minute.  Garnish with cilantro and serve.
