  • 6 Tbs. butter, melted
  • 3/4 C. brown sugar
  • 1 (20-oz.) can sliced pineapples, drained
  • 1 1/2 C. flour
  • 1 C. sugar
  • 1/3 C. shortening
  • 3/4 C. milk
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 egg

Preheat oven to 350 degrees F. Place butter in bottom of casserole dish. Divide brown sugar evenly and sprinkle over butter. Spread pineapple slices over dish. Set aside.

In a medium bowl, combine remaining ingredients and blend at low speed, scraping bowl often. Beat at medium speed, for about 3 minutes, scraping bowl occasionally. Pour batter over pineapple slices in pan. Bake for 20 to 25 minutes, until toothpick inserted comes out clean. Remove form oven and immediately invert onto heatproof platter. Serve warm or cool.
