Pineapple Yogurt Muffins

A double of pineapple makes for yummy pina-colada muffins.

Ingredients

  • 2 C. bisquick or other baking mix
  • 1/2 tsp. baking soda
  • 1/4 C. sugar
  • 1/2 C. coconut
  • 6 oz. pineapple yogurt
  • 1/2 C. crushed pineapple; drained
  • 1 egg beaten
  • 1/3 C. butter or margarine melted

Directions

Mix bisquick, soda, sugar and coconut. Add remaining ingredients. Stir until just moistened. Fill muffin C. 2/3 full. Bake at 400 degrees for 15 to 20 minutes or until slightly browned.

Makes 15 to 18 muffins.
