Pineapple Yogurt Muffins
- 2 C. bisquick or other baking mix
- 1/2 tsp. baking soda
- 1/4 C. sugar
- 1/2 C. coconut
- 6 oz. pineapple yogurt
- 1/2 C. crushed pineapple; drained
- 1 egg beaten
- 1/3 C. butter or margarine melted
Mix bisquick, soda, sugar and coconut. Add remaining ingredients. Stir until just moistened. Fill muffin C. 2/3 full. Bake at 400 degrees for 15 to 20 minutes or until slightly browned.
Makes 15 to 18 muffins.
