Pinto Bean Pie

This pie tastes exactly like a Pecan Pie but it is fun to see the looks on people's faces when you tell them what it really is. My family loves these pies.

  • 1 C. pinto beans with soup
  • 2 sticks butter
  • 1 C. chopped pecans
  • 4 eggs
  • 1 tsp. vanilla flavoring
  • 3 C. sugar
  • 1 can coconut
  • 3 uncooked pie shells
  • Extra pecan halves for decoration

Mash up pinto beans fairly well. Melt butter. Mix all above ingredients together in a large bowl. Pour into three pie shells. Cook at 350 degrees for 45 minutes in uncooked pie shell or until top is golden brown.
