  • 14 oz. of semisweet chocolate chips
  • 4 oz. of unsweetened chocolate chips
  • 1 cup of water
  • 4 tablespoons of instant coffee
  • 2 tablespoons of cocoa
  • 4 tablespoons of sugar
  • 1 ½ cup of heavy cream
  • Chocolate covered coffee beans
  • ¼ cup of pistachio paste
  • 10 egg whites

Heat ½ cup of water in a pan on medium heat, place chocolate, coffee, cocoa and cover for 6 minutes. Then stir until smooth. Place 5 egg whites and whisk while gradually adding 2 tablespoons of sugar. Whisk until stiff. In a bowl add the heavy cream, chocolate mix, and egg whites and mix.

You will repeat this process for the pistachio mousse. Place your 5 egg whites and sugar (whipped) into a bowl with your heavy cream and pistachio paste, and mix. Both mousses are able to sit at room temperature. When ready to serve, place mocha mousse at the bottom of cup and then the pistachio mousse. Top off with chocolate covered coffee beans.
