Pistachio Pudding

Creamy and refreshing, this pistachio pudding makes a pleasant ending to any meal. I made this for a church pot luck and have been asked to bring it every time since.

Ingredients

  • 1 8-oz. tub Cool Whip
  • 1 can crushed pineapple with juice
  • 1/2 pkg. miniature marshmallows
  • 4 oz. chopped nuts (walnuts work best)
  • 1 3-oz. pkg. pistachio pudding
  • 1 C. coconut flakes (optional)

Directions

Mix dry ingredients with cool whip, then add the rest of the items. Put in refrigerator for at least 4 hours.
