Fresh homemade pita bread is delicious and fun to make. It is a simple bread that pairs perfectly with many Mediterranean dishes. Pita bread can be stuffed or folded over to creatively fill sandwiches with a large assortment of hot and cold ingredients such as falafel, salads, barbecued, and deli meats. They can also be cut into strips for dipping with soup, hummus and other sauces.

  • 5 cups white flour
  • 2 ½ tsp rapid rise yeast
  • 1 tbs olive oil
  • 1 tsp salt
  • 1 cup water

Combine the flour, yeast and salt.  Combine the water and oil in a large bowl. Gradually add the flour mixture to the water and oil. Knead in the remaining flour as the dough becomes stiff. Cover with a damp towel and leave it to rest at room temperature for thirty minutes.

Place the dough on a clean work surface dusted with flour. Knead the dough for ten minutes, or until smooth. Place and cover it back in the bowl. Leave it to rise for one hour.

Divide the dough into twelve balls. Flatten and roll out each piece to 8 inches in diameter on a floured surface. Keep the rolled pitas covered as you work.

Heat a heavy skillet over medium heat. Lay a flattened pita on the hot surface and cook one side for twenty seconds. Next, flip it over to cook the other side for about a minute or less.
