  • 6 pita breads (6-inches each)
  • Olive oil
  • 6 eggs
  • 3 tablespoons lemon juice
  • 1 sliced green bell pepper
  • 3 cups arugula
  • 2 sliced avocado
  • Salt and Pepper

Place a grill pan over medium-high heat. Brush both sides of the pita bread with olive oil and grill the bread for 3 minutes on each side. Heat more olive oil in a skillet and crack the eggs into the skillet, cooking them for 3 minutes. Whisk together 1 teaspoon salt and ½ teaspoon pepper, 3 tablespoons olive oil, and lemon juice. Add the arugula to the bowl and coat the arugula. Divide the arugula between the pita breads and top with the egg and sliced pepper and avocado.
