Pita Cheese Calzones

This is the lunch to make when you want something warm, but you don't have much time.

  • 4 whole-wheat pita breads
  • 1 1/2 C. part-skim ricotta cheese
  • 3/4 C. part-skim mozzarella cheese
  • warmed marinara sauce

Preheat oven (or toaster oven) to 400 degrees.  Create a 4 inch opening on the edge of each pita.  Divide ricotta and mozzarella among the pitas. 

Wrap each pita in foil and bake for 5 to 7 minutes, then serve.  Warm the marinara sauce and spoon onto the pitas, if desired.
