No, not chicken pizza- pizza chicken! I call it that because it's loaded with marinara sauce, provolone and ricotta cheeses, and pepperoni!

  • 2 whole chicken breasts, skinned, boned, halved, and flattened
  • 2 tsp. olive oil
  • sprig of parsley, chopped
  • 1/2 C. marinara sauce
  • 1/2 C. ricotta cheese
  • 20 thin slices pepperoni
  • 2 tsp. grated Parmesan cheese
  • 4 slices provolone cheese

In a flat dish, press bread crumbs into chicken on both sides.  Oil one oven-proof casserole dish.  Lay chicken in an oiled casserole dish.  Top successively with 5 slices pepperoni, marinara sauce, ricotta cheese, Parmesan cheese, and provolone cheese.  Garnish with parsley.  Bake in a preheated 400-degree oven for 20 minutes.  Remove from oven with a spatula to heated plates.
