  • 1 Tbsp Salt
  • 3 cups Flour
  • 2 cups Water
  • 1 Tbsp Dry Yeast
  • ½ tsp Sugar
  • 1 Tbsp Olive Oil
  • 6 oz Grilled Rotisserie Chicken
  • 4 oz Mozzarella Cheese
  • 2 Tbsp Italian Herb Seasoning
  • 2 Tbsp Marinara Sauce
  • For salad:
  • Assortment of sliced cucumbers, yellow peppers, tomatoes, green onion and any additional vegetables you would like

Add salt to the flour. In a ½ cup pour luke warm water, put dry yeast and sugar, and let the dry yeast activate. Once it starts to bubble up, add it to the flour and salt. Stir and add water, 1-2 cups more, if needed. Take it out of the mixing bowl and knead for a few minutes or until you have reached a glossy but not too sticky dough ball. Put it back in a deep bowl and brush over top with a little bit of olive oil. Cover and let it rise for next 30-40 minutes. Wash and cut chicken into thin fillets, season and put on the grill. Grill 5-6 minutes on each side. When the dough is ready, split into two medium balls and press and roll out into thin crusts. Spread the Italian seasoning then add marinara sauce, and cheese. Place chicken on top toss a bit more cheese. Cook for 10-15 minutes, depending on how hot your grill is. Serve both pizzas with basil on individual plates with salad on the side.
