Roasted with tomatoes and onions, these potatoes are so so good!

6-8 servings

Ingredients

  • 2 lbs. potatoes
  • 2 lg. tomatoes, peeled, seeded and chopped
  • 2 med. onions, sliced
  • 1 garlic clove, finely chopped
  • 1/2 tsp. dried oregano
  • 1/4 C. olive oil
  • salt
  • pepper

Directions

Preheat oven to 450 degrees. Scrub potatoes with a brush under cold running water. Cut them into 1-inch pieces. In a large baking pan, toss together the potatoes, tomatoes, onions, garlic, oregano, oil and salt and pepper to taste. Spread ingredients out evenly the pan. Roast the vegetables, stirring 2-3 times, for 1 hour. Serve hot.
