  • 1/2 C. pine nuts
  • 8 cloves garlic, chopped
  • 6 C. basil, roughly chopped
  • salt, to taste
  • pepper, to taste
  • 1 1/2 C. olive oil (plus more as needed)
  • 1 C. Parmesan, grated

Place all the ingredients (except the oil) in a food processor and start processing on low. As you add oil, slowly increase the speed. Once it's reached the consistency you like, add salt and pepper to taste. 

To store, top with a drizzle of olive oil and place into airtight containers. May be frozen for up to a month.
