  • 2 garlic cloves, minced
  • 1 lb. shrimp
  • 1 can of diced tomatoes
  • 1 T. olive oil
  • 2 T. paprika
  • 1 green pepper, diced
  • 1 onion, diced
  • 3 celery stalks, diced
  • ½ C. green onions, diced
  • 1 C. white rice
  • Salt
  • Pepper

In a large skillet heat the olive oil over medium heat. Add in the diced green pepper, diced onion, diced celery stalks, diced green onions and minced garlic cloves. Let it simmer. Add in the paprika, diced can of tomatoes, white rice and water. Let it simmer some more. Add in the shrimp. Season with desired amount of salt and pepper. Serve and enjoy.
