Plums are not the most popular fruit used for desserts but this recipe proves they’re completely underrated! This sugarcoated plums are topped in batter and then iced with maple cream cheese frosting for a truly delicious dessert.

  • ½ cup butter
  • 1 tablespoon butter
  • 4 plums
  • ¼ cup white sugar
  • 2/3 cup white sugar
  • 1 cup flour
  • 2/4 cup sour cream
  • 1 egg
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 11 ounces cream cheese
  • 2/3 cup butter
  • ¼ cup maple syrup
  • 4 cups confectioners’ sugar

Begin by making the frosting in a large bowl. Beat the cream cheese and 2/3 cup butter and then add the confectioners’ sugar and maple syrup. Beat until the frosting is smooth. Refrigerate the frosting while you make the cake. Cut the plums into 8 wedges each and preheat the oven to 350 degrees. Butter the cake pan and line it with parchment paper next. In a skillet over medium-high heat, melt 1 tablespoon butter and add the plums and ¼ cup white sugar. Toss the plums to in the skillet for 4 minutes. Place the plums in circles in the cake pan and spoon juices from the skillet over the pan.

Whisk the flour, baking powder and soda, and salt together in a bowl. In another bowl, use an electric mixer to combine the remaining butter and sugar. When the mixture is fluffy, beat in the sour cream, vanilla, and egg. Combine the two bowls and mix well. Spoon the batter into the cake pan. Bake for 55 minutes. Let the cake cool for 1 hour then invert onto a serving platter and decorate with premade frosting.
