  • 4 eggs
  • 2 avocados
  • 2 tsp lime juice
  • 4 slices of bread
  • Butter, for toast
  • Salt and pepper, to taste

Directions

Poach eggs in boiling water for about four minutes. Take eggs off of heat and set aside. Slice avocados, remove seeds, and scoop out the flesh. Mash the avocados in a bowl with the lime juice, salt, and pepper. Toast the bread, spread with butter, avocado, and top with the poached eggs. Serve with your other favorite brunch dishes.
