Ingredients

  • 2 C. milk
  • 3/4 C. cornmeal
  • salt
  • pepper
  • pinch mace
  • 2 egg yolks
  • 1/4 C. butter
  • 2 Tbs. oil
  • 1 onion, sliced
  • 4 mushrooms, sliced
  • 1 green pepper, seeded and chopped
  • 1 chili, seeded and chopped
  • 1/4 lb. ham
  • 1/2 C. baked beans in tomato sauce

Directions

Boil the milk and sprinkle in the cornmeal and stir. Cook for 5 minutes, simmering until thick and like porridge. Season with salt, pepper and mace. Remove from the heat and add the egg yolks and butter. Stir until the butter has melted. Pour the mixture into a greased shallow dish. Smooth with a spatula and cool. When cold, turn out on a board and cut into triangles.

Heat the oil and sauté the onion for 3 minutes, then add the mushrooms, pepper and chili. Cook for 4 minutes. Add the ham, cut in strips, and the baked beans and simmer for 4 minutes. Season. Preheat the oven to 400 degrees. Place the mixture in a dish with the triangles of cornmeal arranged around the edge. Reheat for 10 minutes, and serve hot.

Serve with: Thai Rice
