Polenta with Truffled Mushrooms

Ingredients

  • one 18-oz. tube pre-cooked polenta, cut into 1/2-inch slices
  • 2 Tbs. olive oil
  • 1/4 tsp. black pepper
  • 2 C. sliced cremini mushrooms
  • 1/2 tsp. salt
  • 2 Tbs. white truffle oil
  • 1/4 C. fresh shredded Parmesan Cheese

Directions

Heat a large skillet over high heat.  Drizzle 1 Tbs. of olive oil into pan, arrange polenta slices in a single layer, and sprinkle with black pepper.  Cook for about 4 minutes on each side, or until golden brown.  While polenta cooks, heat 1 Tbs. olive oil in a small pan and cook mushrooms for 5 minutes, adding salt near the end.  Remove from heat and drizzle truffle oil and stir to combine.  Top each polenta with mushrooms and a sprinkle of cheese.
