Polish Cabbage Soup

My grandma made this Polish cabbage soup all year long with her homemade sauerkraut. She never wrote any recipes down, so I have tried to duplicate her soup by memory. We usually eat this with buttered rye bread.

Ingredients

  • 6 slices bacon, diced, or one 6-inch piece kielbasa, sliced
  • 1 onion, chopped
  • 1-2 garlic cloves, finely chopped
  • 2 Tbs. vegetable oil
  • 1 15-oz. can sauerkraut, rinsed, drained, and finely chopped in blender
  • 2 C. coarsely chopped green cabbage
  • 2 Tbs. tomato paste
  • 1 qt. chicken broth
  • 3/4 C. low fat sour cream

Directions

Heat vegetable oil in soup kettle. Fry bacon (or kielbasa), onion and garlic until onion is soft. Add sauerkraut, cabbage, broth and tomato paste. Liquid should come up to level of vegetables. Add water if necessary. Simmer, covered for 1 hour. Stir a little of the hot liquid into the sour cream, then stir sour cream into the soup.
