Poor Man's Cake with Whipped Cream Frosting

This is a cake my great grandmother made during WWI. It is a favorite of my children and myself.

Ingredients

  • 1 lb. lg. raisins
  • 4 C. flour
  • 2 C. brown sugar
  • 1/2 tsp. cinnamon
  • 2 Tbs. shortening
  • 1/4 tsp. cloves
  • 1/4 tsp. allspice
  • 2 tsp. soda
  • 1/2 tsp. salt
  • Whipped topping:
  • 1 C. milk
  • 1 heaping tbsp. cornstarch
  • 1 C. Powdered sugar
  • 1/2 C. margarine
  • 1/2 C. Crisco
  • 1 tsp. vanilla
  • Crushed pineapple, well drained

Directions

Boil the raisins for 5 minutes in a quart of water; let cool. Combine remaining ingredients and bake in lg. 12x18-inch pan in 350-degree oven until toothpick stuck in center comes out clean. This is a very large cake which keeps well and can be frozen. Prepared whipped cream topping to top.

Whipped topping:

Mix milk and cornstarch in saucepan and cook over low heat; and set aside. Combine powdered sugar, margarine, Crisco and vanilla, mixing well until fluffy (use electric mixer).  Then add the milk and cornstarch mixture,  1/4 C. at a time. Beat after each addition. The well-drained, crushed pineapple may be added. Cook until thick; cool. Pour over finished cake.
