Poor Man's Meal

This recipe is a meal on a plate and an inexpensive way to get your protein, carbohydrate, and vegetable all in one meal. It was given to me by my boyfriend and I have made it when I need something quick and inexpensive to serve for a lunch or dinner.

  • 1 lb. ground beef
  • 1 box Bisquick Pancake Mix
  • 1 lg. onion
  • 1 8-oz. can peas and carrots (may substitute: sm. box, frozen)
  • 1 15-oz. can tomato sauce

In a skillet brown ground beef and diced onion until brown and drain off excess fat. Add tomato sauce and simmer on low heat for 15 minutes then set aside. Follow directions on Bisquick Box as if you were making dumplings. Spread this mixture onto the bottom of an 8x8-inch baking pan. Pour beef, onion, tomato sauce mixture over raw dough mixture cover pan with aluminum foil and place in an oven at the temperature of 350 degrees for 10-15 minutes to allow crust to bake. Half way through the baking process, remove the foil and spread peas and carrots mixture over beef mixture (if you use canned, drain off fluid, if you use frozen, thaw enough to be able to separate and cover the mixture) leave the foil off and continue baking for the remaining 1/2 of the time. Allow to sit to firm up a bit and slice and serve to family and friends.

  • I added somepepp er and a little Cavender's to the dumpling mix. I added a little salt & pepper to the meat mixture. Overall. a very good dish, very easy to make and was really filling. My kids want me to make it again.
