  • 2 C. white rice, cooked
  • 2 T. olive oil
  • 3 boneless chicken breasts, cut into bite-sized pieces
  • 3 spicy sausages, diced
  • 1 onion, chopped
  • 1 C. celery, chopped
  • 1 tsp. cayenne pepper
  • Salt and pepper to taste
  • 2 T. flour
  • 1 can (14-oz.) crushed tomatoes
  • 1 ½ C. chicken broth
  • 1 tsp. cumin
  • 2 tsp. chili powder
  • 1 T. Worcestershire sauce
  • 3 scallions, chopped
  • 1 tsp. dried thyme

In a large pot, heat oil and cook chicken until cooked through. Add sausages, onion, celery, cayenne, salt, and pepper and sauté for a few minutes. Add flour and stir. Add tomatoes, broth, cayenne, cumin, chili powder, and Worcestershire and bring mixture to a boil. Remove pot from heat and stir in rice, scallions, and thyme.
