Popover Chicken-Tarragon Casserole
Ingredients
- 1 Tbs. oil
- 2 1/2-3 lb. chicken, cut into serving pieces
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 3 eggs
- 1 1/2 C. milk
- 2 Tbs. butter, melted
- 1 1/2 C. flour
- 1 tsp. dried tarragon
- 1/4 tsp. salt
Directions
Heat oil in large skillet. Brown chicken well on all sides. Sprinkle with salt and pepper. Arrange single layer in greased, shallow 2 qt. baking dish. In medium bowl, beat eggs. Add milk and butter; blens well. Beat in flour, tarragon and salt until smooth. Pour over chicken. Don't stir!
Bake at 350 degrees forĀ 60-70 minutes or until puffed and golden.
