  • ¾ tsp. gelatin
  • 1 T. water
  • ¾ C. coconut milk
  • 2 ½ T. sugar
  • 1 tsp. lemon juice
  • 1 (6 oz.) box strawberry jello
  • 1 C. pomegranate seeds

Prepare strawberry jello according to package directions and stir in pomegranate seeds; set aside. In a small bowl, pour gelatin over water and set aside for a few minutes. In a saucepan, combine coconut milk, sugar, and lemon juice; bring to a simmer, remove from heat, and stir in gelatin mixture until granules dissolve. Let cool slightly and pour into ramekins or preferred dishes. Chill for 30 minutes, spoon on pomegranate layer, and chill for at least another hour to set up and serve.
