Fresh orange and maple syrup flavor this dish, topped off with fresh ingredients.

  • 1 can of Pinto Beans
  • 1/2 Diced sweet onion
  • 2 tsp. of Maple Syrup
  • 1/4 tsp. cayenne pepper
  • 1 clove of garlic diced
  • 1 sliver of shallot
  • 1 tsp. butter
  • 3/4 C. chicken broth
  • 1/4 C. white Wine
  • 1/4 C. of mango juice or orange juice
  • Pork Loin
  • 1/2 lb. of Pork Loin, sliced into 1 inch slices round
  • 1 tsp. cumin
  • 1/2 tsp. of lime zest
  • 1/2 tsp. of Blood Orange zest
  • 1/3 C. of juice from the orange
  • 1/2 squeezed lime juice
  • 1 tsp. of fresh parsley chopped
  • salt and pepper
  • Avocado diced
  • Blood Orange segments

Start with adding all the ingredients for the beans in the crock pot and put on to high.  Make up Pork Loin sliced and marinate in mixture of zest, juice, cumin, parsley, and salt and pepper for about 20 minutes.  Add the whole thing to the beans in the crock pot.  Cook on low for about 4-6 hours. Leave the lid off to cook off some moisture if needed.  Add fresh avocado and orange slices to the top of pork at the end for a fresh taste.
