  • 2 teaspoons ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1 pound pork tenderloin, trimmed
  • 2 tablespoons apricot preserves
  • 1 tablespoon whole grain mustard
  • 1 tablespoon water
  • 2 teaspoons olive oil
  • 1 pound small fresh Brussels sprouts, trimmed and halved

Preheat oven to 400°F.
Combine cumin, garlic powder, thyme, and salt in a small bowl and rub 2 teaspoons of the mixture evenly over pork. With the remaining spice mixture, stir in the chutney, mustard, and water and set aside.
Heat 1 teaspoon of oil in a large cast iron over medium heat. Add pork tenderloin and cook for 2 minutes on each side. In a zip lock bag or enclosed container, toss brussels sprouts in remaining 1 teaspoon olive oil and add to pan.
Bake for about 15 to 20 minutes and then remove from oven. Let cool 5 minutes, slice pork and drizzle with remaining mustard sauce and serve.
