Pork-Bean Cake

This is a great cake; it tastes like spice cake or carrot cake - you would never know it's pork and beans!

Ingredients

  • 2 C. sugar
  • 2 C. self rising flour
  • 2 tsp. cinnamon
  • 4 eggs
  • 1 C. vegetable oil
  • 1 16-oz. can pork-n-beans (remove pork; drain well)
  • 1 8-oz. can crushed pineapple, drained
  • Icing:
  • **You can also use store bought cream cheese icing**
  • 1 8-oz. pkg. cream cheese
  • 1/4 C. margarine
  • 1 box powdered (10X) sugar
  • 2 tsp. vanilla
  • 1 1/2 C. pecans or walnuts, chopped

Directions

Preheat oven to 350 degrees; grease and flour bundt pan. Mix all dry ingredients together; add eggs one at a time, mixing well after each addition. Add oil; mix well. Mash beans; add beans and pineapple to batter. Mix well; Bake 35-45 minutes. Cool completely before icing.

Refrigerate after icing.

Icing directions:

Make sure cream cheese and margarine is room temperature. Cream margarine and cream cheese together; add vanilla and powdered sugar; mix together well; add nuts; mix well. Put icing all over cake. Then add nuts.

** You can also use store bought cream cheese icing (i.e. Duncan Hines creamy homestyle cream cheese icing)
